…eats together?


D is the bread baker (I like that in a husband); recipes that fit into the 30-minute category are more my style.


(fill-in-the-blank) berry muffins

1 1/2 cups flour
1/4 cup corn meal
2 tsp baking powder
1/4 tsp salt
1/4 cup sugar
1 egg
3/4 cup milk
1/4 cup melted butter

After you’ve preheated the oven to 400 ° and greased the muffin tin:
1. Melt butter; set aside to cool.
2. Combine dry ingredients and make a well in the center.
3. Whisk together egg, milk and melted butter; add quickly to dry ingredients.
4. Mix just until combined.
5. Add a cup or so of your favorite fresh or frozen berries — I made the last batch with fresh blueberries and a handful of frozen blackberries.
6. Divide among muffin cups and bake for 20 minutes.

I often substitute some buttermilk for the milk, or squeeze a quarter of a lemon into it before combining the wet and dry ingredients. In my opinion, a little orange or lemon zest never hurt anyone, either.
